New Café to Open at North End’s A.R.E. Health Center & Spa

Virginia Beach, Va. –Beginning August 1, GRAZE Kitchen will open its doors under the proprietorship of Chef Shelley Kilby within Edgar Cayce’s A.R.E. and next to the Health Center & Spa “up on the hill” at 67th Street.

Chef Shelley Kilby was practically born into the culinary profession. Raised by a family of great cooks, she spent many summers on her grandfather’s farm gathering fresh fruits and vegetables then canning them for winter. Family gatherings often involved roasting oysters and picking crabs. “Food has always been such a social aspect of my life so sharing it with others just comes naturally.”

A graduate of the Culinary Institute of America in Hyde Park, New York, Chef Kilby’s educational portfolio includes her extraordinary externship at The Little Nell in Aspen, Colorado. Her mentor was the renowned Chef Bryan Moscatello, winner of Food & Wine Magazine’s “Best New Chefs in America” 2003.

Making her way back to Hampton Roads, Chef Kilby continued developing her own brand of culinary style working in notable restaurants like Todd Jurich's Bistro, Blue Pete's, and Bella Monte.

In 2006, she joined the faculty of the Culinary Institute of Virginia as a Chef Instructor while maintaining her involvement in off-site catering and event work. A student favorite in kitchens at CIV, Chef Kilby has seen many graduates begin their culinary careers in the kitchens where she once worked.

In her latest career move, Chef Kilby is the proprietor and Executive Chef of Graze Kitchen. The seasonal menus at Graze Kitchen will reflect Chef Kilby’s passion for healthy southern-style food, prepared with fresh and locally sourced ingredients. She is committed to producing delicious, beautiful food, paired with exemplary service, and maintaining her commitment to being client-focused.

When outside of work, Chef Kilby can be found on the beach, keeping up with her son and daughter, or in a nearby kitchen, creating meals for friends.

The Café is located on the main floor of the renovated Cayce Hospital Building sharing space with the lobby of the A.R.E. Health Center and Spa and with seating on a climate-controlled porch with a view of the Atlantic Ocean.

Edgar Cayce (1877-1945) has been called the “father of holistic medicine” because of his prolific psychic readings addressing the health of the body.  For more than 40 years of his adult life, Cayce was sought after by thousands seeking help with issues of the body, mind, or spirit. Cayce founded the non-profit Association for Research and Enlightenment (A.R.E.) in 1931, to explore spirituality, holistic health, intuition, dream interpretation, psychic development, reincarnation, and ancient mysteries—all subjects that frequently came up in the more than 14,000 documented psychic readings given by Cayce. The mission of A.R.E. is simply to help people around the world change their lives for the better through the ideas and information found in the Cayce readings. The Virginia Beach headquarters is a popular site for locals and tourists with free daily lectures, a Health Center & Spa, the Cayce/Reilly® School of Massage, an extensive metaphysical library, a meditation garden, a stone labyrinth, and a bookstore and gift shop. Visitors from around the world come to experience conferences featuring speakers on subjects like ancient mysteries, holistic health, and spiritual development. The campus is also home to Atlantic University, which offers two masters degrees (Transpersonal Studies and Leadership Studies) through an online platform, as well as continuing education and certificate programs. Through A.R.E.’s many programs, services, publications, and membership outreach, individuals from all walks of life and religious backgrounds are provided with tools for personal transformation and healing at all levels—body, mind, and spirit.
